For years I have been on a mission to find a good, no, great recipe for salsa. The jarred variety just doesn't get it.

Finally, I decided just to throw together what sounded good to me, ignoring all conventional recipes in order to make it easy and good. The end result was this fantastic salsa that is easy to make with easy-to-find and use ingredients! This recipe is great with or without the optional diced vegetables.

5 CUPS

3 14.5 ounce cans chopped tomatoes, drained, then rinsed 3 times to get rid of the tomato juice flavor
1-1/2 chicken bullion cubes, dissolved in
3/4 cups hot water
6 tablespoons juice from fresh lemons
3 teaspoons white wine vinegar
4-1/2 teaspoons red wine vinegar
1 rounded teaspoon dried cilantro
3/4 rounded teaspoon cumin
3/4 teaspoon salt
1-1/2 rounded tablespoon sugar
3 teaspoons red pepper flakes (this will make a medium hot salsa--for mild or extra hot, add or subtract some pepper flakes)

1-1/2 tablespoons jarred, chopped garlic
3 canned Ortega peppers, diced
1 tablespoon red bell pepper, diced
3 tablespoons small white onion, diced

INSTRUCTIONS:

1. Place the first 11 ingredients in a bowl and blend with a hand food processor until the texture you want. (This also may be done in a blender or a regular food processor.)

2. Stir in the last 4 ingredients and refrigerate.

Man, this is good stuff. You can put it on your burritos or tacos, or pour some on your salad, like my wife does.

Or just break out the chips. Delicious!
